2Eggplants, cut into thick & round slices
50 mlOil
1 tbspCumin seeds
1 cupOnion, finely chopped
1 tbspGinger, finely chopped
1 tbspGarlic, finely chopped
1 tbspGreen Chillies, finely chopped
1 cupTomatoes, finely chopped
1 cupTomato paste
1 tspSalt or to taste
1 tspCoriander powder
1 tspGaram Masala powder
½ tspRed Chilli powder
as requiredWater
White topping:
1 cupThick Curd
½ tspCumin powder
to tasteSalt
1 tspCoriander Leaves, finely chopped

Fry the Baingan Slices

Wash the baingan slices, sprinkle some salt on them, and keep aside for 5 minutes. Squeeze out the excess water, then shallow-fry until golden and lightly crisp.
