This veg kofta curry blends crispy vegetable dumplings with a creamy pumpkin-bottle gourd gravy. The koftas stay soft inside, while the spiced gravy balances richness with freshness. A festive yet simple dish, it’s lighter than most versions but still full of flavour, making it perfect for family gatherings and dinners.

100 gRed pumpkin (kaddu), boiled
100 gBottle gourd (lauki), boiled
1 tspRed chilli powder
1 tbspCoriander powder

½ tspGaram masala powder

½ cupFresh coriander leaves, chopped
½ cupFresh mint leaves, chopped
