Description - Step 1
Prepare The Brinjals
Wash the brinjals and make two cross slits from the base, keeping the stems intact. Ensure the brinjals remain whole so they can hold the stuffing.

Prepare The Stuffing Masala
Grind roasted peanuts, dry coconut, and sesame seeds into a coarse powder. Transfer to a bowl and mix with red chilli powder, turmeric, coriander powder, garam masala, tamarind pulp, jaggery, and salt. Mix well to form a thick stuffing mixture.

Stuff The Brinjals
Gently fill the prepared masala into the slits of each brinjal. Press lightly so the stuffing stays inside. Keep any leftover masala aside for the gravy.

Heat oil in a deep pan and add mustard seeds. Once they splutter, add curry leaves and chopped onion. Saute until the onions turn golden. Place the stuffed brinjals carefully in the pan and add the remaining masala mixture. Pour about 1 cup of water and mix gently.
