Place a pan or kadhai on medium-high heat and add the mustard oil. Let the oil heat until it begins to lightly shimmer.

Add the fenugreek seeds and broken dry red chillies to the hot oil. Let them sizzle for a few seconds. This quick tempering releases their aroma and flavours the oil.

Add the chopped garlic to the pan. Stir it gently and cook until it turns lightly fragrant. Avoid over-browning the garlic, as it can become bitter.
