Sauté the vegetables

In a skillet, heat olive oil over medium heat. Add the diced red onion, red capsicum, corn kernels, black beans, and chopped tomato. Sauté for 3 to 5 minutes, stirring occasionally, until the vegetables soften.

Add spices and seasonings

Turn the heat down and toss in the cumin, salt, paprika, and chilli powder. Stir everything together so the veggies are well-coated in the spices. Let it cook for about 2 minutes, then remove it from the heat and set it aside.

Assemble the quesadilla

Place a tortilla in a frying pan on medium heat. On one side, add a small handful of vegan cheese, then a few spoonfuls of your veggie mix, and top it off with another sprinkle of cheese. Now, fold the tortilla in half and gently press it down with a spatula. Cook each side for about a minute, or until they turn golden and crispy. Repeat this process with the rest of the tortillas.
