The Aashirvaad Paratha Challenge is a hunt for winter’s best parathas featuring greens, protein and more, perfect for a wholesome breakfast. Featured here is the Broccoli Paneer Cheese Paratha by Archana Gupta, one of the winning entries from week 2 of the 4-week challenge. It uses Aashirvaad High Fibre Atta with Multigrains, which contains a nutritious blend of six grains, with the goodness of paneer, broccoli and cheese. It’s a clever way to sneak in greens for kids who hate them, while keeping things tasty.
Add Aashirvaad High Fibre Atta with Multigrains into a bowl with a pinch of salt and a little ghee. Slowly add water and knead into a soft dough. Cover the dough and let it rest for about 15 minutes.

Prepare the broccoli and paneer stuffing
For the stuffing, wash the broccoli and chop it, then put it in a chopper with the green chilli, garlic and onion. Coarsely chop them. Grate the fresh paneer and mix with the chopped vegetables. Add the ginger, salt, red chilli powder, pepper powder and fresh, chopped coriander and mix everything well.

Making the parathas
Heat a tawa on your stovetop while you make the parathas. Take a portion of the dough and roll it out into a small circle. Add some stuffing into the circle, and half the cheese slice (reserve the other half for the second paratha), and gather the edges to seal and roll it into a ball. Using a light hand, gently roll into a slightly thick paratha. Repeat with the rest of the dough and filling.

Cooking the parathas
Grease the tawa with ghee and put the paratha on it. Cook one side lightly and apply ghee around the edges and on top. Cook until both sides are golden and lightly pink. Remove the cooked paratha from the tawa and repeat with the rest. Your broccoli paneer cheese high-protein parantha is ready. Serve for breakfast, lunch or dinner with raita or thecha.

Making the thecha
Take the roasted peanuts, watermelon seeds, green chillies, and garlic in a vegetable chopper and chop them. Add salt and mix. Heat oil in a kadhai and add chilli flakes, let them sputter, then add them to the thecha and mix. Add lemon juice too and mix again.
