Description - Step 1

Step 1: Prepare the filling

  • Start by heating 1 teaspoon of ghee in a pan.

  • Next, toss in some grated coconut and jaggery. Give it a good stir until the jaggery melts and everything is nicely combined.

  • Then, sprinkle in some cardamom powder and mix it all together.

  • Let it cook for about 5 to 6 minutes until the mixture thickens up. 

  • Once it's done, set it aside to cool.

Step 2: Prepare the outer dough

  • Boil 1 cup of water with a pinch of salt and a teaspoon of ghee.

  • Once it’s boiling, gradually add in the ragi flour and rice flour while stirring quickly to mix everything well.

  • Cover the pot and let it cook for about 2 minutes.

  • After that, turn off the heat, let it cool down a bit, and then knead it into a soft dough.

Step 3: Shape the modaks

  • First, rub some ghee on your hands to prevent sticking.

  • Grab a dough ball roughly the size of a lemon and flatten it into a little cup.

  • Spoon in the coconut-jaggery filling.

  • Then, pinch the edges together and form it into a modak shape.

Step 4: Steam the modaks

  • Place the shaped modaks in a steamer.

  • Steam them for about 8 to 10 minutes until they have a nice glossy finish.
