Just like your wok- or pan-tossed chowmein or hakka noodles, these too don’t take long to fix and take 30 minutes, with an ample portion of chicken and mushrooms that are specially cooked to give them a rich flavour. The usual dan dan noodle recipe uses minced pork, but this recipe uses chicken, a lean meat with less saturated fat. There are also veggies like baby spinach, so you get your vitamins and minerals, plus iron from it. The sauce is cooked with chicken broth, which further makes it a nourishing meal to have and has that comforting element associated with soups, perfect for monsoons! The chilli oil and hoisin-based sauce further add to its appeal.
You can cut down on time further by using store-bought chilli oil and replacing the ground chicken with minced rotisserie chicken mixed with the condiments. You can also use other vegetables like pak choi, beans, carrots, or capsicums, all julienned or finely diced, and add them during the making of the broth.
