Wash, peel, and slice all fruits evenly so they dry at the same rate. Combine lemon juice and honey in a bowl. Toss apple, banana, and kiwi slices gently in this mixture to prevent discolouration and add a light glaze.

Arrange for Drying

Line a large baking tray with parchment paper. Arrange fruit slices in a single layer, making sure they don’t overlap. If using an air fryer, place them on the rack in a single layer for even drying.

Oven-Dry the Fruits

Preheat oven to 90°C (195°F), a low temperature prevents burning. Bake for 2 to 2½ hours, flipping once halfway through. Fruits should feel dry to the touch but still slightly pliable.

If using an air fryer, dry at 80°C for about 2 hours, checking every 30 minutes.

Once done, remove trays and let fruits cool completely. They will become chewier as they cool. Store them in airtight containers or glass jars. Properly dried fruits can last for up to 2 weeks at room temperature.
