Let's start by roasting all of our dry fruits and seeds in a pan.
In a heavy-bottomed pan, we're going to heat up our jaggery along with some water over low heat. Keep stirring continuously until it forms a smooth syrup. To check if it's ready, simply take a bowl of water and drop a small amount of syrup into it. It should form a hard ball when rolled between your fingers. That's the sign we're looking for!
Once our syrup is ready, it's time to add a touch of cardamom powder to the mixture for that extra flavor boost. Now, swiftly add in our assortment of dry fruits to the hot jaggery syrup. Make sure to mix everything together thoroughly, ensuring that all of the dry fruits are nicely coated with the syrup.
Let's prepare our workspace by greasing a flat surface with some ghee. Now, carefully pour the hot mixture onto the greased surface and spread it out evenly. While the mixture is still warm, grab a greased knife and use it to cut our gajak into the desired shapes and sizes.
Store in an airtight container for future consumption.
