250 gPenne or spaghetti
1½ cupsMushrooms, sliced
1 smallOnion, finely chopped

Description - Step 1
Make Palak Pesto
Blanch the spinach leaves for 1 minute and then rinse them with cold water. Blend the spinach with garlic, cashews, lemon juice, olive oil, salt, pepper, and Parmesan until smooth.

Cook Pasta
Cook spaghetti or penne pasta in salted water until it reaches the al dente stage. Set aside a little amount of cooking water after draining the spaghetti.

Prepare Mushroom Sauce
Sauté the garlic and onion in olive oil until they release their aroma. Sauté the mushrooms until they become golden. Add half a cup of cream and season with salt and pepper. Allow to simmer until it becomes thick.

Combine & Toss
Toss the spaghetti with the mushroom sauce and palak pesto. Use the pasta water you set aside to thin the sauce if necessary.
