1½ litresChicken stock
1 tbspGhee or butter
1Large onion, finely chopped
200gButton mushrooms, thickly sliced
200gBrown mushrooms, thickly sliced
1–2Green chillies, slit
2 cupsPearl barley, rinsed and soaked for 30 minutes
½ tspTurmeric powder
½ tspCumin powder
½ cupGrated cheese or Parmesan
2 tbspCream or malai (optional)

Description - Step 1

Step 1: Roast the Chicken

Combine 1½ teaspoons of lemon zest, 1½ tablespoons of lemon juice, 2 tablespoons of olive oil, half of the coriander and mint, and half of the garlic. Coat the chicken thighs with the seasonings to marinate. Roast the marinated chicken at 200°C for 40-45 minutes, or until golden and cooked through. Set it aside.
