Onion pakoras (or kanda bhajiyas) are a popular Indian fritter made with thinly sliced onions tossed in a spiced gram flour batter and deep-fried till crisp. Adding rice flour makes them extra crunchy, while green chillies and chaat masala add that familiar street-style kick. Perfect during monsoons or as a tea-time snack, these are best enjoyed hot with family or friends around.

Description - Step 1

Step 1: Salt The Onions

Add sliced onions to a large bowl and mix with salt. Set aside for 10–15 minutes. This draws out moisture and helps soften the onions, which is key for a crunchy texture later.

Step 2: Mix In The Masalas

Add red chilli powder, turmeric, coriander powder, cumin powder, carom seeds, and chopped coriander to the onions. Give everything a gentle mix.

Step 3: Add The Flours

Add gram flour and rice flour to the spiced onions. Don’t add water—use the moisture from the salted onions to bind everything. The mixture should be just wet enough to hold shape.

Step 4: Fry The Pakoras

Heat oil in a kadai over medium flame. Drop small portions of the onion mix into the hot oil. Fry until golden brown and crisp. Drain on absorbent paper.

Step 5: Fry The Chillies

Slit green chillies and fry them in the same oil until they blister. Drain and sprinkle with salt.

Step 6: Finish And Serve

Sprinkle chaat masala over the hot pakoras and serve with the fried chillies on the side.
