Methi Thepla is a famous dish of Gujarat that is not only nutritious but also delicious, filling, and perfect for breakfast. It's a simple Indian flatbread made using fresh fenugreek leaves (methi), wheat flour, gram flour, and basic spices. You can whip up this soft thepla in a short time and it is ideal for those busy mornings. Soft on the inside and adequately spicy, it is a favourite in many Indian households.

¼ cup Gram flour (besan)
1 tspGinger paste
1 tspChilli paste
½ tspRed chilli powder

2 tbspSesame
½ tspCumin powder
2 tbspKasuri methi
½ tspSalt (or as required)
½ cupCurd (yoghurt)

Description - Step 1

Prep methi leaves

  • Rinse methi leaves in running water and drain them.
  • Use a paper towel to dry the leaves. 
  • Now, finely chop the leaves and put them in a large mixing bowl.

Description - Step 2

Add the spices and flours

  • Mix in ginger paste, red chilli powder, turmeric powder, cumin powder, garam masala, kasuri methi, chilli paste, ajwain, sesame, and a pinch of hing.
  • Next, add in curd and salt, and mix the ingredients well.

Description - Step 3

Add the flours and knead

  • Further, add the whole wheat flour and gram flour and give it a good mix.
  • Add water if required while kneading and knead it to a smooth dough.
  • Also, add some oil to the dough and knead again.

Rest the dough

  • Cover the dough and let it rest for around 20 minutes.

Roll the theplas and cook

  • Make medium-sized balls with the dough and dust with wheat flour.
  • Take a dough ball and gently roll it into round flatbreads with the help of a rolling pin.
  • Heat a non-stick pan or tawa over medium-high heat. Once it’s hot, put the rolled thepla on the surface. 
  • Let it cook for about 30 to 40 seconds or until some faint air pockets are seen forming on top.
  • Flip it over, add a splash of oil, and let the other side cook for another 30 to 40 seconds.
  • Flip it back once more, apply some oil, and cook until both sides have light golden spots.

Serve Warm

  • Stack the theplas while they are warm. Drape a clean cloth over them to keep them soft.
