2Green chillies, deseeded and cut into juliennes

200 gramsTomatoes, finely chopped (about 2 medium)

160 mlYoghurt, whisked (about ⅔ cup)
300 mlHot water

Description - Step 1

Step 1: Fry the Jackfruit

Heat oil in a heavy kadhai or pan on high heat. Once the oil is hot, gently add the jackfruit pieces without overcrowding the pan. Fry them until they turn golden brown on all sides. Turn occasionally so they cook evenly. Remove the fried pieces using a slotted spoon and place them on kitchen paper to absorb excess oil. Keep about ¼ cup of the frying oil aside for cooking the masala.
