When it comes to South Indian dishes that are famous across the globe, dosa and idlis top the list. But in recent years, appam has also arrived on the scene. A type of savory pancake, appams are made from a fermented batter of rice and coconut and served with curries. In this version, the plain appam gets an upgrade - a runny, salt and pepper egg in the center.

Ingredients

1½ cupsRaw rice (soaked 4 hrs)
½ cupGrated coconut
2 tbspCooked rice
½ tspYeast (optional, for fermentation)
1 tspSugar
½ tspSalt (or to taste)
as neededWater (for batter)
6–7Eggs (1 per appam)
for greasingOil

Description - Step 1

Step 1: Soak rice and prepare batter

The first step is to always soak rice, ideally for 4 hours. Next, grind soaked rice, grated coconut, and cooked rice. For a slightly thicker batter, add a little salt and water. In this mixture, add sugar and yeast to aid fermentation. Transfer the batter into a large bowl and cover it. Leave the bowl for 6-8 hours, or overnight, to allow fermentation.
