Prepare the Poha
In a bowl mix the thin poha with some coconut water. The poha should be slightly wet. Next, add the onions, salt, sugar, and lime juice. Mix well.

Prepare the Tadka
Heat some oil in a pan, and add the peanuts, curry leaves, mustard seeds, cumin, turmeric powder, and green chillies. Sauté for one minute.

Assemble the Poha
Add the tadka to the poha. Add the coriander leaves, grated coconut, and crushed papad. Serve immediately.
