The Indian pancake or malpua is a delicacy that has been enjoyed for generations. During festive occasions, especially Diwali, it is both a sacred offering and a celebratory treat. These malpua pancakes are soaked in warm, aromatic rose syrup, adding a fragrant twist. Desserts made with rose water are truly unique for the way they elevate flavour and aroma.

Description - Step 1

Step 1: Prepare the Rose Syrup

Add sugar and water to a pot and bring it to a boil. Let the sugar dissolve completely over low heat for 5 to 7 minutes, or until the mixture becomes slightly thick and syrupy. Remove the pot from the heat and stir in the rose water along with a drop of pink food colouring. Mix well and set aside.

Step 2: Make the Batter

Take a big bowl and combine maida, semolina, fennel, cardamom powder, sugar, and milk, then mix well. Before you start cooking, add a small amount of baking soda. For best results, allow the batter to rest for a minimum of 1 hour.

Step 3: Fry Malpuas

In a flat pan, melt some ghee. Use a ladle to pour the batter and make round-shaped pancakes. Flip once during cooking to ensure even browning. Keep them crisp and fluffy by adjusting the heat to medium or low.

Step 4: Dip in Rose Syrup

The hot Malpuas should be transferred straight into the heated rose syrup. Give them a soak for around two to three minutes. Remove malpuas from the syrup with caution, then place them on a wire rack to allow any excess syrup to drain.

Step 5: Garnish and Serve

Add some edible silver leaf, chopped almonds and pistachios, and dried rose petals as a garnish. You can serve the malpua pancakes hot or cold, as you prefer.
