Whether it’s for breakfast, brunch, or a speedy dinner, this dish is super easy to make, healthy, and ready in less than 20 minutes.

Description - Step 1

Prep time

First, drain the tofu and mash it lightly with a fork until it’s mostly smooth, but make sure to keep some small chunks for added texture. After that, crack the eggs into a bowl and whisk them gently.

Cook onions and tofu

Heat some oil in a non-stick pan over medium heat. Once it’s hot, add the chopped onions and green chilli, sautéing them for 2-3 minutes until they’re soft and fragrant. Then, stir in the mashed tofu along with turmeric, salt, and black pepper. Cook for another 2-3 minutes until the tofu is slightly warmed.

Cook the omelette

Gently pour the whisked eggs over the tofu mixture, spreading it out so it covers everything evenly.

Next, turn the heat down to low and let it cook for around 5 minutes with a lid on, until the bottom is nice and golden and the top has set.

If you want, you can flip it gently to cook the other side for another 1 to 2 minutes.

Garnish and serve

Before you serve, sprinkle some fresh spring onions on top for that perfect finishing touch.
