Place a bowl over a double boiler. Gradually add butter while whisking until you achieve a creamy/saucy consistency. Incorporate seasoning and whisk again. Set it aside.

In a bowl, combine carrot slices with soya sauce, red chili sauce, pizza seasoning, and corn flour. Mix thoroughly until well-coated.
In a heated pan, add oil. Sauté the carrot bacon strips until they turn golden brown in color.

Toast the bun and poach the eggs
In the same pan, melt 1 tsp butter and toast the base of the bun until golden brown.
In a saucepan, bring water to a boil and add 1 tbsp vinegar. Stir the water clockwise with a spoon and immediately drop 1 egg into the center. Poach it for approximately 1 minute and 40 seconds or until the desired doneness. Remove the egg using a ladle and place it on a dry paper towel to drain excess water.

Arrange the dish and serve
Arrange the prepared carrot bacon strips on top of the toasted buns.
Place the poached egg on top of the bacon strips. Drizzle hollandaise sauce over it. Serve hot and enjoy!
