Raita recipe takes many forms and can incorporate everything from raw and cooked vegetables to fried boondi to fruit. This recipe's cold yoghurt, warm cumin, hint of chilli, and crisp apple come together to make a version of raita that is bright and balanced. The crisp, sweet-tart apple brings a juicy snap and natural sweetness that complements the yoghurt tang without overwhelming it. If you are welcoming guests for dinner or lunch, then you can prepare the seasoned yoghurt ahead of time, but wait to grate and add the apple until just before serving so it stays fresh and doesn't brown. This version of the cooling Indian yoghurt raita will surely delight them. For variation, you can add chopped banana to make Apple Banana Raita. Do not beat curd using an electric blender; otherwise, the raita consistency will be thin. Moreover, use an apple of your choice, like a green apple, a red apple, etc.
