Boil some water in a pan. Add the red rice and cook. The rice will absorb the water completely.
Mix sugar and warm water with the yeast, to activate it. Set aside for 10 minutes till it becomes frothy.
Once the rice is cooked, spread it on a flat surface to dry. Add the yeast and mix it properly.
Place the rice in a large container. Place a red chilli on top. You can cover the rice with sukhna leaves (optional) and leave it for 2-3 days. After 2 days, the rice will leave water. Add water and mix properly. The rice starch will come on top. Strain the mixture. The Handia is ready!
