Roasted vegetables infused with garlic and fresh herbs are a flavourful, nutritious, and easy side that perfectly complements entrees like grilled chicken, lasagna, and more.
Preheat the oven to 200°C (425°F). Also, chop and prep your vegetables.

Make the herb mix and coat the vegetables
In a large mixing bowl, add 4 tbsp of oil, along with dried herbs, sea salt, and garlic powder. Mix until it’s well combined. Add the chopped vegetables to the bowl. Now, mix well, ensuring all the vegetables are evenly coated.

Bake the vegetables
Spread the vegetables evenly over two large baking sheets. Keep the vegetables in a single layer; avoid stacking on top of one another. Bake for 20 minutes. Note: Keep a lookout for broccoli.

Add the garlic cloves and bake
While the vegetables bake, mix the remaining oil and garlic cloves. Now, pour this mixture over the vegetables and give a good stir. Bake them again for 8-10 minutes, or till the vegetables are roasted enough to your liking. Serve hot.
