Description - Step 1

Step 1: Cook the lentils

Rinse and drain the soaked toor, chana, and moong dal. Place them in a pressure cooker with asafoetida, turmeric, and 2½ cups water. Cook for 4–5 whistles until soft. Mash lightly with a ladle and keep aside.

Step 2: Temper the spices

Heat 1½ tbsp butter in a deep pan. Add cumin seeds until fragrant. Stir in ginger and garlic, sauté for a minute, then add green chillies.

Step 3: Make the base

Add chopped onions and cook until golden brown. Stir in tomatoes and salt, and cook until they turn pulpy. Add red chilli powder, garam masala, and coriander leaves.

Step 4: Combine dal and masala

Pour the cooked dal mixture into the pan and mix well. Cook for 4–5 minutes, stirring occasionally so it doesn’t stick to the bottom.

Add the remaining butter. Switch off the heat, squeeze lemon juice, and mix well. Garnish with a sprig of coriander. Serve hot.
