Step 3: Combine the Dry Ingredients
In another bowl, sift together plain flour, cocoa powder, baking powder, and salt. Sifting helps avoid lumps and ensures even mixing.
Gradually fold the dry mix into the wet mixture using a spatula. Stir until you get a thick but pourable batter. Avoid over-mixing; a few streaks of flour are perfectly fine.
At this stage, fold in the dark chocolate chunks and chopped nuts, if using. They will melt slightly while baking, giving pockets of gooey chocolate and crunch.
