Jowar bhakri and baingan bharta are both heart-warming dishes from Maharashtra that bring together the earthy goodness of millets and the smoky flavour of fire-roasted eggplant. 2-3Green chillies, sliced
4-6 clovesGarlic, minced

2 tbspFresh coriander, chopped
For jowar bhakri
1 cupJowar flour (Sorghum flour)
¾ cupHot water (or add as required)
⅛ tspSalt (adjust to taste)

Description - Step 1

Roast the eggplant

Lightly grease the eggplant with oil and roast it directly on an open flame. Roast until the skin is charred and the flesh turns soft. Once done, place it on a kitchen towel and let it cool slightly. Peel off the charred skin and mash the flesh in a bowl.
