2 large eggsWhisked Lightly
2 tbspMilk
1 cup Breadcrumbs
1 tspOregano – Dried or Fresh
1 tspThyme – Dried or Fresh
3 tbspOlive Oil
To make the sauce
3 tbspGood Quality Olive Oil
1 medium-sizedOnion – Finely Chopped
3-5 Garlic Cloves – Minced
1Can of Diced Tomatoes or Tomato Puree
Sugar 1 tsp
Red Chilli Flak¼ tsp
Salt to Taste
1 cupMozzarella Cheese – Shredded
¼ cup Parmesan Cheese – Shredded
Black Pepper to Taste
¼ cupFresh Basil Leaves

Slice the Eggplants

Slice the eggplants and place the slices on a baking tray. Now, sprinkle some salt on the eggplant slices and gently rub with your fingers. Keep this aside for 15 minutes. This will remove the moisture from the dish.
