Step 1: Make the Dough

Mix refined flour and salt in a large bowl. Add water gradually and knead until the dough becomes soft yet firm. Cover it with a damp cloth and let it rest while preparing the filling. This resting period helps the wrappers roll out smoothly without breaking.

Step 2: Prepare the Chicken Filling

Combine chicken mince, spring onions, ginger, garlic, green chillies, soy sauce, and a pinch of salt in a bowl. Mix well to ensure flavours spread evenly. Keep the mixture slightly chilled, as it locks in moisture and keeps the momos juicy after steaming.

Step 3: Roll and Shape

Divide the dough into 16 equal portions. Roll each into small balls and flatten with a rolling pin into thin, round discs. Place a spoonful of filling at the centre. Gently fold edges, pleating as you go, and twist at the top to seal tightly.

Step 4: Steam the Momos

Arrange momos on a greased steamer plate, leaving space between each. Steam over medium heat for about 20 minutes, or until the wrappers turn translucent and glossy. Ensure steam circulation is even, so the momos cook through without sticking together.
