Sauté the onions
Add oil to a saucepan and heat on medium-high. Once the oil is hot, add ginger, garlic, green chillies, and sautè for 30 secs. Then, add the onions and sautè till they turn translucent.

Add the mixed vegetables
Add the mixed vegetables to the same pan and sautè for 2 minutes until the veggies are tender-crisp (not fully soft). Then add the vegetable stock, salt, and black pepper and mix. Bring this mix to a boil. Briefly let it simmer before turning off the heat.

Add the lemon and coriander
Once the heat is off, add the lime juice and coriander (cilantro) at the end and mix well. Adjust seasoning at this stage. Serve hot with a side of crisp, fried noodles.
