Step 1: Prepare Hung Curd

Place the yoghurt in a clean muslin cloth or cheesecloth. Tie it tightly and let it hang till all the extra water is drained out. You’ll be left with ¼th cup of hung curd. This step is important because it helps the mishti doi set nicely and gives it a creamy texture.
