Soak the apricots in water overnight until they're soft and plump. Then, remove the seeds and set the flesh aside.
In a large pan, combine the apricot flesh, sugar, and water. Mix everything well, then bring the mixture to a boil over medium heat.
Next, add the saffron the apricot mixture. Stir until the flavors blend well. Then, reduce the heat to low and let it simmer for about 20-25 minutes until the apricots are fully cooked and tender. Stew until the mixture is neither too dry nor too runny.
To finish off our delightful dessert, garnish it with some slivered almonds and pistachios for that extra crunch and visual appeal. And for an indulgent touch, feel free to add a scoop of vanilla ice cream on the side. It adds a wonderful richness and flavor contrast to the dish. Enjoy!
