Masala Idli Waffles are a fun fusion twist on the traditional South Indian idli. Soft, tangy idli batter is transformed into crispy, golden waffles infused with spices, veggies, and herbs. Perfect for festive occasions or casual fusion feasts, they bring warmth, colour, and excitement to your table.
Heat some oil in a pan, and then toss in the mustard seeds. Once they start to splutter, add in the chopped onions, ginger-garlic paste, green chillies, and curry leaves. Sauté everything until it’s fragrant and the onions take on a nice golden hue.

Mix with idli batter
Grab a large mixing bowl and combine the idli batter with the prepared tempering, grated carrot, turmeric, chilli powder, salt (if needed), and coriander. Stir everything together until it's well blended. Add water if required to thin out the batter.

Preheat and grease the waffle maker
First, preheat your waffle maker. Lightly brush with oil on the waffle plates to prevent sticking.

Now, pour a ladle of masala idli batter into the waffle maker. Close the lid and let it cook until it is golden brown and crispy on the outside.
