The smell of freshly baked bread is what gives bakeries, across the globe, that signature, sweet scent. But nothing is stopping you from replicating that scenario and scent in your kitchen. Especially with an easy dish, like this milk bread recipe that yields buttery soft, fluffy, and slightly sweet bread. You can use it for soft sandwiches (like egg and mayo), or even enjoy it as is with a simple spread. Whether you’re planning a tiffin meal, a quick breakfast, or even a simple tea-time snack, milk bread fits the bill.

Directions
Description - Step 1
Make the bread dough
Take a large bowl, add heavy cream, milk, 1 egg, and ⅓ cup of sugar in the listed order. Whisk lightly to combine. Then add all-purpose flour, instant yeast nd salt (add on the side, not directly over yeast). Mix everything and knead for at least 10-12 minutes, till you have a soft dough. If the dough is too sticky, add a tbsp of dry flour. If using a mixer, knead for only 8-10 minutes.
Description - Step 2
First rise
Place the dough in a lightly greased bowl. Cover with a damp cloth and let it rise until doubled in size. While the bread rests, grease two baking trays or load pans with butter. You can also use round pans.
Description - Step 3
Shape the bread loaves
Once the dough doubles, gently punch down the dough to release air. Transfer it to a lightly floured surface and divide into two equal loaves or 8 smaller rolls. Shape tightly into rectangles or balls and place them in greased loaf pans or baking trays.
Description - Step 4
Second rise
Cover loosely and let the shaped dough rise again until it’s puffy and about 70–80% larger in size. Do not skip this step — it ensures a soft, fluffy crumb.
Description - Step 5
Bake the bread
Preheat the oven to 350° F/175°C. Prepare egg wash to brush the dough by beating 1 egg with 1 tbsp of water. Brush the dough with egg wash and bake for 25 minutes or until it turns golden brown.
Description - Step 6
Brush with sugar water
Mix 1 tbsp of sugar with 1 tbsp of hot water until the sugar is completely dissolved. This is your sugar syrup. Brush it over the freshly baked, warm bread. It adds shine and sweetness. Let bread cool at least 20–30 minutes before slicing to avoid a gummy texture.
