Murukulu or Murukku is a spicy and crispy deep-fried South Indian snack that can be consumed anytime and anywhere with tea or other hot beverages.

Ingredients

Rice flour
1 cup
Besan
½ cup
Butter
1 tbsp
Pepper powder
1 tsp
Oil
1 tsp
Ajwain
½ tsp
Turmeric powder
¼ tsp
Salt as needed

Directions

Prepare the Dough

In a mixing bowl, first take the dry ingredients such as besan and rice flour. To this mixture, add ajwain, turmeric powder, pepper powder, salt, butter and oil. Mix well using your fingers. Add water little by little to make a soft dough.

Shape the Murukku

Pour oil into a pan and wait until piping hot. Take a murukku press with a star-shaped hole and put some of the dough. Close the murukulu press and start making chakli/murukulu directly in the oil or on an oiled ladle before transferring to the oil. Fry until golden and crispy on all sides, occasionally flipping in between.

Plating and Storing

Drain into a plate lined with tissue paper. Store in an airtight container and serve when needed.
