Description - Step 1

Step 1: Prep the pan and ingredients

Grease and flour a 12-cup bundt pan or 10-inch tube pan. Sprinkle ½ cup toasted chopped pecans into the bottom of the pan. Preheat oven to 160°C.

Step 2: Make the cake batter

Beat softened butter and cream cheese with an electric whisk until smooth in a bowl. Add brown sugar to the bowl, and beat for 5 minutes until light. Add eggs one at a time, mixing well after each. Fold in flour gently without overmixing. Stir in vanilla extract, 1 cup toasted pecans, and brickle bits.

Step 3: Bake the cake

Spoon batter into the prepared pan. Place the pan on a baking sheet and slide it into the oven. Bake until a toothpick inserted comes out clean. Cool in the pan for 10 minutes, then remove to a rack to cool completely.

Mix heavy cream, brown sugar, and corn syrup in a heavy-bottomed saucepan. Cook over medium heat until it reaches 105°C on a candy thermometer. Remove from heat and stir in vanilla, salt, and ½ cup toasted pecans.

Allow the glaze to thicken slightly as it cools, then spoon it generously over the cooled cake. Refrigerate extra glaze for topping ice cream or plain cake.
