Description - Step 1

Knead The Paratha Dough

In a large bowl, combine whole wheat flour and salt. Add a little oil and rub it in using your fingers until crumbly. Gradually add water and knead into a soft, smooth dough. Cover the dough and let it rest for 15–20 minutes. This helps the base of the roti pizza to be more pliable, easy to roll out, and cook evenly with a soft yet sturdy texture.

Prepare The Pizza Topping

In a small bowl, mix the grated mozzarella, pizza sauce, chopped capsicum, onions, sliced olives and mushrooms, oregano, chilli flakes, salt and pepper. Combine well, taste and adjust the seasoning if needed.

Roll And Half-Cook The Paratha Base

Divide the rested dough into 8 equal portions. Roll each portion into a flat round base about 15 cm in diameter. Heat a griddle or tawa over medium heat. Cook each paratha for about 30 seconds on each side, until light brown spots appear. Don’t cook it fully yet — this is just to partially cook the base. For a different take, you can encase the toppings inside the dough balls and roll them out, cooking the stuffed parathas as you would a regular roti for a more traditional-style pizza paratha.

Add Toppings And Cook Like A Pizza

Reduce the heat to low. Spread a spoonful of pizza topping mixture evenly over the top side of the semi-cooked paratha. Cover the pan with a lid and cook for 4–5 minutes until the cheese melts and the base becomes crisp. If you're wondering how to make paratha even crispier, you can place the topped paratha in a preheated oven or on a tawa with a lid for an extra melty effect.

Serve Hot

Remove the pizza paratha carefully from the tawa. Slice into wedges and serve hot with extra pizza sauce, ketchup, or a side of garlic dip.
