Description - Step 1
Prepare the rice
Wash and soak basmati rice for about 10 minutes. Pour 4 to 5 cups of water into a large pot and bring it to a boil. Now add the soaked and drained rice to the pot. Pour 1 tsp of oil to prevent the rice from turning sticky. Mix well and cook for 10 minutes or until the rice is al dente. Drain off rice in a colander, let it cool completely, and fluff it with a fork.

Prep the veggies
While the rice cools, chop carrot, beans, capsicum, cabbage, spring onion, green chilli (if using), and garlic. Separate the spring onion green and white when chopping it. Keep aside a handful of spring onion greens for garnish.

Sauté
Heat a wok with oil on high flame. Add garlic and slightly fry for 30 to 40 seconds. Next, toss in carrots, beans, peas, cabbage, spring onion white, and capsicum. Stir-fry for 2 to 3 minutes until slightly crisp.

Seasoning
Toss in some soy sauce and vinegar. Give it a good stir to combine everything nicely.

Add rice
Add the cooked rice along with salt and black pepper. Toss gently without breaking grains and fry for about 3 to 4 minutes.
