10-12Curry leaves

Description - Step 1

Soak sabudana

  • Rinse the sabudana well until the water runs clear.
  • Soak it for about 4 to 5 hours or overnight and drain it completely afterward.

Description - Step 2

Tempering

  • In a kadai, heat up some ghee and toss in cumin seeds. Let them sizzle for a bit. Then add in the ginger, green chilli, and curry leaves. 
  • Sauté everything for about a minute.

Add potatoes and peanuts

  • Toss in some diced boiled potatoes and sauté them for a few minutes.
  • Next, mix in the peanuts and give it a quick stir for about a minute.

Add sabudana

  • After that, add the soaked sabudana along with a pinch of sugar and rock salt. Cover with a lid, and let it cook for 2-3 minutes.
  • Once that’s done, take off the lid, sprinkle a little water, cover it again, and let it cook for another 2 minutes or until they turn transparent.

Finishing

  • Finally, toss in some fresh coriander leaves, and give everything a good mix. 
  • Turn off the heat and finish it off with a squeeze of lemon for that extra zing.
