Rajgira aloo paratha is a wholesome and gluten-free flatbread made with amaranth flour, perfect to prepare during Sawan fasting. This rajgira flour recipe uses ingredients that perfectly align with the rules of sattvic eating. The paratha dough is prepared using mashed, boiled potatoes that help bind everything together, making the dough much easier to shape. Also, green chilli, sendha namak and other seasonings give great aromatic flavours to the paratha.
