Step 2: Create the wine reduction
Add red wine, 1 cup sugar, cinnamon sticks, cloves, star anise, orange zest, and ginger to a large saucepan. Bring to a boil over medium-high heat, stirring until the sugar dissolves. Reduce the heat to medium-low and simmer uncovered for 15-20 minutes until reduced by half. The mixture should coat the back of a spoon. Remove from the heat and let it cool for 10 minutes.
