Spinach dal is a popular stew-like dish served during the winter. Spinach and legumes are cooked together in a mix of spices. The spinach, which is in-season during winter, boosts the protein and fibre content. Often served with rice or roti, the dish is perfect for lunch or dinner.
Thoroughly rinse the dal under running water. Wash and chop the tomatoes. Add the rinsed dal and tomatoes to a pressure cooker, along with 1-2 cups of water, salt, and turmeric. Pressure cook for 2 whistles (approximately 10 minutes). Once the pressure releases, open the lid and lightly mash or whisk the dal until smooth.

Cook the spinach
Heat oil in a pan on medium heat. First, add cumin seeds. When they sizzle, add the ginger-garlic paste and chillies and sautè for about 30 seconds. Then add the hing and chopped spinach. Now, sautè for another 3-4 minutes or till the spinach leaves wilt and soften.

Add the cooked dal
Add the cooked dal to the pan with the spinach and give it a good mix. Stir in additional water (½ -1 cup) for a runnier consistency. Otherwise, let it simmer for 5 minutes, allowing the flavour to blend, before turning off the heat. Squeeze lemon juice and garnish with freshly chopped coriander.
