Description - Step 1

Step 1: Roast the coconut

In a heavy-bottomed kadai on low heat, roast the fresh grated coconut while stirring continuously. The aim is to reduce excess moisture without allowing the coconut to brown. This step ensures the naru stays fresh longer and gets the right texture.

Step 2: Add the jaggery

Incorporate grated or powdered jaggery into the coconut, mixing well until evenly coated. The jaggery begins to melt with the warmth, creating the base of the ladoo mixture filled with earthy sweetness.

Step 3: Cook the mixture

Stir the mixture non-stop on low to medium-low heat until it thickens slightly and leaves the sides of the pan. Avoid overcooking, as this can make the naru hard or chewy instead of soft and delicate.

Step 4: Test doneness

Take a small portion of the mixture, let it cool slightly, and try to form a ball. If it shapes easily, the mixture is ready. This quick test ensures your nails have perfect consistency.

Step 5: Shape the sweets

Switch off the heat, add cardamom powder, and mix well. Once the mixture cools, grease your palms with ghee or coconut oil and shape into small or medium balls. Each naru should be smooth and uniform, ready for puja offerings.

Allow the narus to cool completely at room temperature before storing them in an airtight container. Refrigeration extends their shelf life for several days. Depending on the jaggery used, the colour may range from golden brown to deep brown.
