Step 1: Prepare the Corn

Start by boiling or steaming the sweet corn, then drain it and set it aside before mixing the ingredients.

Place a small pan on the stove and add 1 teaspoon of oil. Add mustard seeds and let them splutter in the heated oil. Fry the curry leaves until they turn crisp, then remove from the heat.

Toss the corn with the whole spices, finely chopped onions, tomatoes, green chilli, coriander and shredded coconut. Stir in the freshly squeezed lemon juice.
