Step 1: Prepare the Masala Tempering

Warm oil in a pan and add mustard seeds. Once they pop, add cumin seeds, curry leaves, and green chilli. Stir until fragrant, then add ginger and onion. When the onions soften, toss in tomatoes, turmeric, red chilli powder, and salt. Cook until the mix turns thick and aromatic. Cool it completely before mixing.

Step 2: Mix the Oats Base

In a large bowl, combine rolled oats, curd, milk, and a pinch of salt. Mix well to form a slightly runny batter-like consistency. The oats will thicken overnight, so ensure there’s enough liquid for soaking.

Step 3: Combine Masala and Oats

Add the cooled masala mix to the oats base and stir until fully blended. You’ll see specks of curry leaves and chilli peeking through; that’s your flavour booster. Adjust salt if needed and mix until smooth.

Spoon the mixture into airtight glass jars or containers. Leave some space on top for toppings. Add grated carrot, cucumber, and coriander for crunch and freshness. Avoid adding lemon juice now; it’s best added just before serving.

Seal and refrigerate the jars for up to 3 days. For busy mornings, grab one jar and enjoy it cold for a cooling, tangy start. If you prefer warmth, microwave for 30–40 seconds. Stir well and squeeze fresh lemon juice before eating. The flavour deepens beautifully by the second day.
