Description - Step 1

Step 1: Roast Nuts

Preheat the oven to 200°C. Spread almonds, pistachios, and sliced cashews on a baking tray. Roast for 7–8 minutes until lightly golden and fragrant. This enhances the nuts’ natural flavours, creating the crunchy texture needed for the chikki. Grease a rolling pin with ghee while nuts are roasting.

Generously grease the countertop or worktop with ghee. This prevents the chikki from sticking while rolling and shaping. Keep the rolling pin ready and greased to ensure smooth, even thickness.

Step 3: Cook Sugar Syrup

In a thick-bottomed pan, add sugar, cardamom powder, saffron strands, and 1 tbsp ghee. Cook over medium heat, stirring continuously until the syrup thickens and turns a light golden brown. Remove from heat promptly to avoid burning while maintaining a glossy consistency.

Step 4: Mix Nuts with Syrup

Immediately add the roasted nut to the warm syrup. Stir gently but thoroughly to coat all nuts evenly. Transfer the mixture onto the greased work surface while it is still hot to allow for easy rolling.

Sprinkle dried rose petals over the nut mixture. Using the greased rolling pin, roll the mixture evenly to approximately 1 cm thickness. Work quickly before it hardens to ensure uniform thickness for easy cutting.

While the chikki is slightly warm, make shallow cuts with a knife into desired shapes (squares or rectangles). Allow it to cool completely, then gently break along the marked lines. The bark should have a firm, crunchy texture with a nutty aroma.
