Toast the Hemp Seeds
On a low-medium flame, dry roast those hemp seeds in a pan for about 7 to 10 minutes. We want them to just lightly change color, not entirely brown them. Once done, remove them from the pan and let them cool completely.
Prepare the Laddoo Mixture
Alright, let's heat up the ghee and fry those cashews until they're a light golden color. Once they're done, transfer the cooled hemp seeds into a blender. Toss in the cardamom pods and give it a few pulses until the hemp seeds turn into a powder. We don't need it super fine, just enough to blend. And remember, don't blend it all at once, or else the hemp seeds might release oil.
Combine the mixture
Now, let's move that ground hemp seed mix into a bowl. Add in the almond flour and powdered jaggery, and give it all a good mix. Take a taste to check for sweetness, and adjust as needed.
Shape & Serve the Hemp Seeds Laddoo
Now, let's toss in those fried cashews along with the ghee. Make sure to incorporate the ghee into the mixture well. It should be easy to form into ladoos. To bind it even better, add about a teaspoon of almond butter to the mix. Grab a small portion of the mixture and roll it into a round-shaped ladoo.
