Modak is undoubtedly the star of Ganesh Chaturthi. But nivagrya, or steamed rice flour discs, is the lovable side character that becomes a fan favourite. Nivagrya is a spicy, steamed snack. perfect for mid-day munching or late-night cravings. Because it typically uses leftover rice dough, this light and fluffy snack is also a “zero-waste” item.
Use a pan to boil water with salt and oil. Once the water is boiling, lower the flame and add the rice flour. Then, briskly stir till a soft dough is formed.

Step 2: Flavor The Dough
Transfer the dough to a plate and let it cool slightly. Mix in chopped green chillies and cumin seeds into the dough. Add salt, if required. Coriander leaves are also an optional ingredient that you can mix in at this stage.

Step 3: Shape The Dough (Nivagrya)
Grease your palms with oil and start shaping the dough (while it’s warm) into small discs. You can also choose a different shape, like small, lemon-sized balls.

Grease a steamer with oil and gently place the discs inside. Let them steam until they turn glossy and firm

Take out the discs and plate them. Serve it with green chilli thecha or cold yogurt.
