Ellu Bella
For Makar Sankranti: Karnataka’s Festive Sesame Mix

Ellu Bella is a Sankranti preparation rooted in texture rather than sweetness. Unlike laddoos or brittle, this mix depends on dry ingredients handled with restraint—sesame roasted just until aromatic, peanuts skinned cleanly, jaggery chopped instead of melted, and coconut cut small for even bites. This recipe focuses on timing, temperature, and proportion so the mix stays crisp, fragrant, and easy to share.

Directions

Description - Step 1

Step 1: Roast Sesame

Add sesame seeds to a dry pan and keep the flame low to medium. Stir continuously as the seeds warm and begin to puff lightly. They should release a nutty aroma and turn slightly creamy, not dark. Switch off the heat immediately and transfer to a bowl to prevent carryover roasting.
