This delightful treat comes from South India and is known for its melt-in-your-mouth texture, thanks to the combination of roasted semolina (rava/sooji), coconut, ghee, and sugar. It’s a festive sweet that brings comfort and joy. They’re quick to prepare and only require a few ingredients, making these laddus perfect for any celebration, or even as a homemade sweet treat to enjoy with family during gatherings.

Description - Step 1

Step 1: Dry roast rava

  • To dry roast rava, start by heating a pan over a low flame. 

  • Add 1 cup rava and roast it for about 5 minutes, or until it becomes aromatic. 

  • Once done, set it aside.

Description - Step 2

Step 2: Roast coconut

  • Simply take ½ cup freshly grated coconut and lightly toast it in the same pan for about 2–3 minutes, or until the moisture has reduced.

Step 3: Fry the nuts

  • Start by heating 1 tablespoon of ghee in a pan, then toss in the chopped cashews and raisins. 

  • Fry them until they turn a lovely golden brown, then set them aside.

Step 4: Mix the dry ingredients

  • In a mixing bowl, combine the roasted rava, roasted coconut, sugar, cardamom powder, along with the fried cashews and raisins.

Step 5: Add ghee and milk

  • Next, pour in the remaining 2 tablespoons of ghee and gradually add warm milk, mixing it all together until it forms a cohesive mixture.

Step 6: Shape the laddus and serve

  • While the mixture is still warm, take small portions and roll them into round laddu shapes using your greased palms.

  • Let the laddus rest for a few minutes before you serve them or store them away.
