These no‑cook paneer bhurji sandwich rolls are a smart, quick‑prep snack or light meal that skips the stovetop altogether. Crumbled paneer is mixed with fresh chopped vegetables, yoghurt (or mayonnaise) and seasoning, then rolled in bread or tortillas.
Mix crumbled paneer, shredded cabbage, grated carrots, chopped bell pepper, chopped tomato and chopped onion in a bowl. Add yoghurt, salt, pepper, lemon juice and a pinch of chaat masala. Mix well until evenly combined.

Assemble the rolls
Take a slice of bread or a wrap like a tortilla and spread 2-3 tbsp of the paneer mixture onto it. Roll it tightly, pressing gently. Repeat with the remaining slices. Optionally, cut each roll in half.

Place the rolls on a plate and chill in the fridge for 10 minutes if you prefer them cold. Serve immediately as is, or wrap up for lunch.
